The Making of Curry Chicken

It was my first attempt making chicken curry and I must said I was quite happy with the result. Hubby liked it so much that he just kept having it despite him not able to take much spicy food.

Ok here are the ingredients for the chicken curry:






1. 1kg of chicken drumlets
2. 200ml - 300ml of coconut milk
3. 230g Curry Paste (some are pre-mixed)
4. 50g Curry Powder (I like to prepare some curry powder because I usually find the pre-
mixed curry paste not strong enough)
5. Curry leaves (just a few leaves for fragrance)
6. Potatoes (800g to 1kg depends on your preference)
7. 600ml of water



STEP 1: Wash the chicken drumlets & then marinate it with the curry paste for 20-30mins



STEP 2: Wash the potatoes, removed the skin before cutting them into smaller pieces




STEP 3: Fried the potatoes till golden brown




STEP 4 & 5 : Add a little oil and fried the chicken. Then add in water and simmer - low flame (taste & add curry powder if you like)



STEP 6 & 7 : Add in the Potatoes and cook for 2-3mins. Then add in the coconut milk according to your desire (note before u add the coconut milk, the taste of the sauce will be slightly bitter but after you add in the coconut milk the taste is sweeten. Cook for another 5-8mins (or till the sauce is bleneded well & the chicken cooked)
